They analyze new cases that have come out, suggest new theories or interpretations of laws, suggest new laws or amendments to current laws, compare US laws to those of other countries, attempt to resolve circuit splits on important issues, you name it. It's similar to the kind of research and publications that any humanities and most social sciences professors will do. A lot of law professors draw heavily on humanities and social sciences anyway. They'll do statistical or economics analysis of the impact of a law or the differences between courts. They'll apply sociological or even literary theories to certain subjects. It's a lot like any other professor. It's also a lot more complicated than "novel ways to sue" or "get criminals off the hook." If you're affiliated with a school you probably have access to academic databases. Go read a couple of issues of the Harvard Law Review.
